Shiso : fiche d'identité

Le shiso est une plante de la famille des Lamiaceae qui peut atteindre 90 cm de hauteur selon les variétés. Le nom latin du shiso est Perilla frutescens. On le nomme aussi herbe serpent à sonnette, sésame sauvage, péril de Nankin et les Chinois l'appellent zisu. Shiso est l'appellation phonétique de zisu au Japon.

Le shiso est cultivé en Asie. Il y est utilisé depuis le IIIe siècle pour ses vertus thérapeutiques. Il est considéré comme une plante :

  • Ornementale : c'est une plante esthétique qui fleurit en fin d'été et dont les feuilles sont tout aussi élégantes.
  • Aromatique : les feuilles de shiso parfument agréablement de nombreux mets. Sa saveur semble être une association de cannelle, de poivre, d'anis de menthe voire de basilic et de mélisse. On les utilise fraîches de la même façon que le laurier-sauce par exemple, ou séchées puis réduites en poudre. Vous pouvez cultiver du shiso en pot, en massif ou au potager, afin d'avoir toujours des feuilles aromatiques sous la main. Pensez à protéger votre shiso des gelées.
  • Médicinale : en phytothérapie, le shiso est proposé sous forme de : poudre, gélules, feuilles fraîches, infusion/tisane, huile essentielle.
  • Alimentaire : n'hésitez pas à ajouter des feuilles de shiso à vos salades fraîches, à vos poissons, à votre riz. Quant à ses fleurs, elles ne sont pas que décoratives : les fleurs de shiso sont aussi comestibles.

Si vous n’avez pas la chance de pouvoir en faire pousser, vous pouvez vous rendre dans des magasins bio indépendants, chez des producteurs locaux spécialisés ou sur les marchés (étalages des condiments ou plantes aromatiques) pour acquérir un shiso bio de bonne qualité.

Le Shiso : Une feuille au goût unique et très aromatique !

Deux variétés de Shiso sont notamment utilisées dans la cuisine japonaise, celle aux feuilles vertes et celle aux feuilles pourpres. Au goût, c’est absolument unique et très aromatique, à la fois herbacé et acidulé. Comme la plupart des herbes aromatiques, il vaut mieux l’utiliser cru, en laissant les feuilles entières ou en les éminçant. Au Japon, on rencontre la variété verte, servie avec le sushi, le sashimi et le tempura entre autres. Il s’agit de l’aojiso dont les feuilles sont plus petites et qui sont consommées telles quelles, entières ou hachées, souvent réfrigérées. Comme il ne s’agit que d’une variation de taille et de pigment, la forme pourpre peut être pratiquement consommée de la même manière, comme au Vietnam, par exemple, où les feuilles d’akajiso remplacent parfois les feuilles de menthe fraîches et la carambole dans les rouleaux de printemps crus (les fameux cha gio, prononcés [tcha yo]), que les Vietnamiens du Nord appellent aussi nem-nyon ou goï-kwun). Le Shiso pourpre fait également office de colorant puissant, on l’utilise notamment pour la préparation des fameuses umeboshi (prunes salées).

Utilisation du shiso

  • En usage interne : minéralisant, antibactérien, expectorant (toux), antiseptique, antispasmodique, antiasthmatique, carminatif (c'est-à-dire qu'il réduit les flatulences), stomachique (qui favorise la digestion), tonique.
  • En usage externe : apaise et répare, revitalise.

Bon à savoir : les périlles (feuilles de shiso) peuvent être utilisées pour préparer une inhalation. Elles sont très utiles pour dégager les sinus.
